Our pasta is made from scratch in advance of each week's market. We produce in small batches to make sure our quality is as close to what you'd taste if you made it yourself at home. Our flours are all organic, our eggs are farm fresh, and our produce is sourced from local farmers. We take great care in ensuring the quality and constancy of the product meets the most demanding of expectations.

Flavored pastas will include additional fresh herbs and produce as noted. All ingredients used are fresh and bought whole, we do not use any flavoring agents, dyes, preservatives or other chemicals.
A few tips on storing:
Since our product contains fresh eggs, it is necessary to keep it refrigerated. Peak freshness is maintained for around 3 days after purchase, but can be refrigerated for up to a week. Alternately, you can store it in the freezer for up to 2 months.
Simply boil water and cook the pasta for 2-3 minutes. The pasta will float to the surface as the noodles cook. Also, Italians maintain that the pasta water should be salted. The common guidance is to use enough salt so that it tastes the same salinity as the ocean. This imparts a bit of flavor to the noodles, which will enhance the end dish.
